Lollo Rosa

Hailing from Italy, Lollo Rosa means “red husk” in Italian. The fan-shaped leaves of this succulent, bold-flavored lettuce are a violet color at the tip and green at the base.

Tango

This heirloom variety of lettuce has a frilly leaf and a tangy flavor that is similar to endive. Its crispy texture and dark green color add crunch and color to the mix.

Mizuna

This power green is known by a number of other names around the world, including Japanese mustard. It has a feathery, light appearance and a slightly spicy, exotic flavor.

Radicchio

Not actually green, this purple and white leaf from the chicory family has a slightly spicy and bitter flavor, which is beautiful when balanced with other greens.

Wild Dandelion

This perennial packs a nutritious punch. One of the most nutrient-dense greens on the planet, wild dandelion adds a lovely peppery flavor to any salad.
